PASTRY ROLLS WITH RADICCHIO AND CHEESE

Ingredients for 4 pastries
2 tapered radicchio heads,
1 roll of puff pastry,
4 thin slices of fresh cheese,
extra-virgin olive oil,
red wine,
salt, pepper.

Method
Clean the head of radicchio and cut it lengthwise to obtain a thickness of 2/3 cm. Sauté in a non-stick frying pan with a little extra-virgin olive oil and then simmer with some red wine until reduced. Season with salt and pepper. Allow to cool. In the meantime, roll out the puff pastry and place the cheese and cooled radicchio in the middle. Roll up and bake in a hot oven for 7/8 minutes at 180°.
