Late Red, Early Red, Variegated, Round and Semi-long Radicchios come from unique ecosystems, in which biodiversity is carefully safeguarded. They are high in antioxidants and contain large amounts of beta-carotene, a precursor of vitamin A. They are also a good source of potassium. More or less intense red in colour, with delicate variegations, long or round, flower-shaped or compact, Veneto radicchios are an excellent ally in the kitchen. The variegated type is in fact sweet, pleasantly bitter and very delicate: the early long, round and semi-long varieties are slightly bitter and fairly crisp.
